Cheap bean recipes for kids home during summer?

      My kids are now home for the summer. I went to Ollie’s yesterday and bought noddles at 79 cents along with beans and rice.

      Things are expensive and I am just wondering if anyone can share some recipes with beans since my kids will be eating a lot of beans and rice while they are home.

        A lot of schools during the summer. Public schools nearby will provide free breakfast and lunch for school aged children up to 18.

        Just look at your local public school website for locations where they offer free meals at the cafeteria to eat or pick up at

          I’ve made black bean burgers a few times. Check out some recipes online.

          They were very simple and maybe will add some new meals

            You could do beans and hot dogs or sausage or do a bean and pasta dish like pureed beans with a cheese for a creamy sauce on it

              Change up the flavors that you season with. Think outside of the normal Tex mex flavors.

              Try…
              Cheesy pesto
              sweet BBQ
              Tuscan
              Curry
              Pineapple/bacon
              Teriyaki
              Sweet chili

              All of these would be delicious, nourishing, comforting and very inexpensive.

                Make a simple vegetable soup and add beans to it, rice and bean burritos make and freeze some, vegetable, rice and beans bowls

                  I’m plant based and eat mostly beans! Lentils can be used in place of *most* hamburger meat dishes (sloppy joes, spaghetti, etc), use chickpeas so make chickpea noodle soup, chickpea salad sandwiches and hummus.

                  Black bean fried tacos are my favorite to pair with Spanish style rice.

                  And chili is always an easy transitional meal for beans.

                    I make ‘chicken noodle soup’ with white beans instead of chicken.

                    I also recently found a yummy Spicy Pinto Bean soup (the heat can be adjusted) from The Magical Slow Cooker site, and a mexican bean soup.

                        I don’t have a recipe, but offer this – in my school district kids can get free sack lunches all summer long. Perhaps your school district does the same.

                            I mix beans and a can of corn with rice. Add cumin and chili powder. Use as an inexpensive taco or burrito filling.

                            I also scramble eggs with bean for breakfast tacos.

                            In addition to the flavor, you don’t need as many eggs.

                              Pinto beans with chopped green chilies (small can), cumin and oregano. Vary by adding a can of diced tomatoes and/or corn or hominy.

                              Sprinkle shredded cheese on top. Serve with cornbread.

                                My family likes to add beans to spaghetti I make a meat sauce to put on top then circle it with pinto beans. It makes the meat go further and adds protein.

                                The tomato sauce for the spaghetti adds a great flavor. Some parm on top makes it awesome.

                                We also make casserole with rice, corn, ground meat, diced tomatoes green chilies, and water chestnuts with black olives, seasoned with garlic onions and basil.

                                Top with cheese. It sort of tastes like pizza, it’s a variation on another casserole, but the water chestnuts add a crunch that’s awesome.

                                Nearly everyone says add cheese to noodles now, but I like butter, olive oil and herbs with Parmesan and a salad.

                                There are a lot of recipes where beans are the staple. Chickpeas are inexpensive and make a great addition to a lot of dishes.

                                  Varieties of bean burritos. Bean & cheese, bean & spanish rice, bean and fried potatoes, bean and any veggie you have, bake with enchilada sauce.

                                  Tortillas are super simple to make (flour, pinch of salt, warm water and a bit of oil)

                                  Burritos freeze well. Batch cook and pull out a few when needed.

                                  Spaghetti noodles with browned garlic butter and parmesian cheese. (optional: petite dice 1 roma tomato and add)

                                      If you have an insta pot or pressure cooker, be sure to buy dried beans and use the appliance to cook them.

                                      Much cheaper than canned beans.
