Hey y’all.. I’m looking for a way to stretch 2 chicken legs into a meal for a family of 3. I need some creative ideas.
Fairly well stocked pantry/fresh veg to work with, as well..
Thanks in advance!

LisaI sometimes make chicken fried rice with that R-a-Roni stir fried rice. I add cooked chicken, chopped scallions, peas and carrots.
I add a scrambled egg when its nearly done, and a couple dashes of soy sauce.
You need to allow it to sit uncovered to let some of the steam off and the rice to dry a bit, or you can just put it in a dish in a warm oven to achieve the same texture as takeout
AmyApricot chicken and rice, Curried chicken and mash. Load either with veg
