How can I stretch 2 chicken legs to feed 3 people?

      Hey y’all.. I’m looking for a way to stretch 2 chicken legs into a meal for a family of 3. I need some creative ideas.

      Fairly well stocked pantry/fresh veg to work with, as well..

        Pasta, alfredo sauce with veggies chop the meat up and add it to the pasta

          Lo mein – vegetables and noodles. Add chicken bouillon for added flavor.

                I sometimes make chicken fried rice with that R-a-Roni stir fried rice. I add cooked chicken, chopped scallions, peas and carrots.

                I add a scrambled egg when its nearly done, and a couple dashes of soy sauce.

                You need to allow it to sit uncovered to let some of the steam off and the rice to dry a bit, or you can just put it in a dish in a warm oven to achieve the same texture as takeout
