Favorite bean-based main or side dish (not chili)?

      What’s your favourite way to eat beans as a main dish either as a bean or to replace a meat. We love lentil tacos. How about beans as a side dish?

      We already make chili so please don’t suggest that haha

          I am a hard core carnivore, but I do enjoy the occasional Black Bean Burger.

            I like to mix canned green beans, pinto beans and black beans. Then separate bowls of olives, shredded cheese, cooked ground meat or shredded chicken.

            I put each on my plate and mix with salsa and chips, or roll into a wrap. Very good

                Sloppy joe with lentils. Any sort of soup. Black bean burgers. Make pinto beans into refried beans and have bean burritos (it’s a different texture than just normal beans).

                  I love 7 layer bean dip, make a big batch and eat it as a main dish w/ chips.

                    I love shepherd’s beans, it’s pinto beans in a frying pan, with their juice, add 2 cloves of finely minced fresh garlic, a finely diced sweet onion and a nub of butter.

                    Slowly simmer till the onion is soft.

                    You can eat it with a side of loaded mashed potatoes, or baked potato and some nice crusty bread with butter to scoop it up.

                      I don’t ..I occasionally have baked beans as side but other then that no thank you. don’t do Rice either .. so gross

                        I make 7 layer bean dip. With corn chips. It’s a meal. I use greek yourgout instead of sour cream.

                          Loaded baked potatoes, top with beans, cheese, salsa etc.
                          Beans in a curry sauce
                          Quinoa salads (or other grains like couscous, farro, rice, millet) add beans, nuts, cheese, fruit/veggies, etc.

                          Ex: quinoa with black beans, peppers, strawberries, mint
                          Farro with walnuts, chickpeas, mushrooms , pinto or kidney beans
                          Lemon couscous with white beans

                          Chickpea salad, feta cheese, chickpeas, diced onions, scallions, tomatoes, etc.

                          Vegan “tuna” salad (uses mashed chickpeas)

                            Street tacos with garbanzo beans, regular tacos with pinto and black beans instead of meat, enchiladas or burritos with sautéed onions and bell peppers and black and pinto beans, cannellini beans with pasta and Alfredo or cream sauce, taco salad with refried beans, pinto and black beans

                              Minestrone soup.. extra beans.
                              -I buy the base can of Minestrone soup and then dump in red kidney beans and pinto beans to make more substance.

                                  Sometimes I use white beans in chicken noodle soup instead of chicken, or in addition to chicken.

                                  When my daughter went vegetarian I switched to veg broth too (but I like chicken broth better).

                                    Beans on buttered toast, a common quick, filling, go to meal in England. (Van Camps or your favorite baked beans).

                                    Bean soup with a pile of mashed potatoes in the middle of the bowl. Beef soup, tomato, any soup really.
