What can I do with a piece of tough beef shank? It’s cooked but only lightly. I bought it to eat as rare steak only to find out this cut is tough!
It’s already been lightly cooked, but now I’m not sure what to do with it. Are there any good ways to salvage it?
Can I still turn it into a tender and flavorful dish without overcooking it completely?
I’d love to hear your tips or recipes!

SueSlice it thin and use it for beef and broccoli or a stirfry. Cut some into smaller pieces and use for beef fried rice.
Cut some into small cubes for beef barley soup.
ShirleyIt needs to be cooked a long time in moist heat. Cook it like you would a roast. Long time in the oven covered well with some water or in a pot like a pot roast.
Stew would be good.
Boil it tender and then BBQ it in the oven.

HeatherI was always told to use something with vinegar, Italian dressing. The vinegar breaks down the meat fibers.
OR buy a “sous vide”, a special cooker for meat to tenderize it.
MicheleMarinade in lemon juice or Italian dressing, soya sauce over night – anything acidic. Then put in slow cooker with veggies and cook all day.
Or slice very very thin and add ti stir fry after marinating
